One of my favorite childhood memories is picking blueberries with my family near the shores of Lake Michigan. With our fingers stained a rich purple, and our buckets heaping, we would talk about my mother’s yummy baking skills and how we were going to enjoy the “fruits” of our labor.
Now that I’m older, I still find these healthy little berries a delicious treat. However, I’ve been transforming my mother’s recipes into healthier snacks for my growing family and creating new traditions near the shores of the gulf coast. Here is my new fresh favorite which my daughter has named, The Prookie!
Blueberry Protein Cookies –
HERE’S WHAT YOU’LL NEED:
4 egg whites
1/2 cup oatmeal
1 cup blueberries
2 scoops Arbonne Vegan Vanilla Protein Powder
(20 grams of pea protein)
DID YOU KNOW…
Fresh berries carry little gems in the form of vitamin C, vitamin A and vitamin E. Altogether, these vitamins work as potent anti-oxidants.
Combine egg whites, protein powder, and oatmeal
Gently stir in blueberries
Drop spoonful of mixture on a baking sheet (with nonstick spray)
Bake at 425 degrees for 10 to 15 minutes
(makes 10 cookies)
